Why do we store wine? Apparently 98% of all wine consumed in America is consumed within 48 hours of it’s purchase. Since stores and restaurants don’t have the space, time, or money to store wine, that means that most wines are drunk very young. While there is nothing wrong with that, there is another dimension that gives some wine drinkers great pleasure: the well aged, sometimes subtle, usually unmistakable elements of a fine older bottles. Last night we opened a 15 year old California Chardonnay and a 14 year old Oregon Pinot Noir. The chardonnay was on its last legs, but not quite its last gasp. Still unique and highly enjoyable to a critical and experienced palate. The Pinot was ethereal, like a fine old Burgundy with all its elements beautifully married and balanced. Big fruity bouquet, with cherry, blackberry, leather and tar on the nose. It’s lush ruby color was just slightly opaque. And it tasted great!<\/p>\n
